Citric Acid Characteristics and Health Benefits

Citric acid is an organic acid found in fruits such as plums and lemons, and is the main ingredient in their acidity.

In 1937, the British biochemist Dr. H.A. Krebs elucidated the mechanism of human energy generation and discovered that citric acid plays a central role. For this theory of the "citric acid cycle" or "Krebs cycle," he was awarded the Nobel Prize.

In Japan, research by Dr. Shichiro Akiya of the University of Tokyo has attracted much attention. Dr. Akiya made the following discoveries
(1) During World War II, when citric acid was added to miso used on submarines to prevent mold, crew fatigue decreased and health improved.
Longer dives are now possible.
(2) We conducted an experiment in which we ourselves ingested citric acid and confirmed that the amount of lactic acid in our urine decreased.

These studies have scientifically proven that citric acid has important effects on fatigue recovery and health promotion, such as activating the citric acid cycle and inhibiting the production of lactic acid, a fatigue substance*.

How to use citric acid

Citric acid is listed as a stabilizer of vitamin C in the official food additive standard and is also widely used as an acidulant to impart a cool sensation. (Food Chemical Monthly, February 1987, Vol. 22, p. 31)
Adding citric acid to commercial soft drinks makes them more refreshing.

Citric acid is used in a variety of foods as a pH adjuster and acidulant. According to the Ministry of Health, Labor and Welfare, pH adjusters are food additives that keep foods in the proper pH range. Since the growth of microorganisms is affected by pH, adjusting the pH of foods can also be expected to improve food shelf life.

Citric acid is also used in bath salts and bath bombs.

Cleaning and laundry

Citric acid is acidic, so it can dissolve calcium and neutralize alkaline stains. It dissolves white hardened substances such as water stains on faucets, sinks, and mirrors, and soap scum in the bath.
(Caution) Please note that mixing with chlorine-based products (mold remover, bleach, etc.) may cause a chemical reaction that emits harmful chlorine gas and is dangerous.
